(OrganicJar) My friend Lisa Paris is back! Today she is going to show all of us how to transform our carrot pulp into a quick delicious dessert!.
Here’s what you’ll need to make this:
Ingredients
- 2 Cups – Carrot Pulp
- 1 Cup – Pitted Medjool Dates
- 1/2 Cup – Dried Coconut
- Cinnamon
- Agave Nectar
- Sea Salt
Equipment
- Food Processor
- Bowls and Measuring Cups
Directions
- Place all ingredients in the Food Processor and grind for about 1 minute until everything is well mixed.
- In a separate bowl combine cinnamon and dried coconut (set aside)
- Take the newly mixed ingredients from the food processor and roll them into small ‘Beta Carotene’ balls. Then roll them around in the bowl of cinnamon and coconut. ENJOY!

I used to take the pulp and squeeze lime and some hot sauce on it…
But this looks like a great idea!

In Place of pumpkin you can use any PULP!
I use apple, carrot,zuchinni, chopped rhubarb.
I have been using this recipe for over 20 years and it hasn’t failed me yet. Enjoy.

Pumpkin Bread/Muffins
Preheat 400 degrees
9 X 13 baking pan
3 eggs, whisked
1-1/4 C. Brown sugar (You can use honey too!)
1 -1/2 C. melted butter
2-1/4 C. Pumpkin PUREE in food processor
3 C. Flour
2 Tbs. Cinn.
1-1/2 tsp. cloves
1-1/2 tsp.nutmet
1 tsp. ginger
2 tsp. baking powder
2 tsp. baking soda
Mix all ingred. adding wet to dry, either bake in bread pans or make muffins. Sprinkle with pumpkin seeds at 400 degrees 25 min.

I love these little things!! I process the coconut & cinnamon for dusting & it looks like cake crumbs! Adds that layer of illusion :)

Not too sure if I like this recipe… Turned out kinda oooey goooey… I didn't use coconut shavings, cuz I forgot to get at the store… Thinking I should roll it in sugar and crushed walnuts once they're finished cooling down in the fridge… Whaddya think?
